If she wets her pants a lot during the day she should definitely wear some protection during the plane ride. All airport terminals have handicapped stalls in the restrooms which should give you enough room and privacy to make a change before or after the flight. Depending on the level of protection she needs and the length of the flight it might be possible to make it without needing to change during the flight, especially if she can use the restroom on the plane at least some of the time. If you think she will need a change during the flight you should try to use something she can change herself in the tiny restroom on the plane, like a pullup or maybe a baby diaper inside her panties. The baby diaper would be easiest to change, she wouldn't have to completely remove her pants to slip a new one in.
